Delectable Tuesday Blog Hop 8/30 - Fruity Fun Skewers

Has school started were you are? Our homeschool is going to start next week and although I do not have to pack lunches for the kids we do need quick fun lunches during the school week.

This recipe is fun, easy and healthy. Best of all the kids can put them together with just a little bit of help. Add a quick sandwich or wrap and lunch is ready!


Fruity Fun Skewers

5 large strawberries, halved
1/4 cantaloupe, cut into balls or cubes
2 bananas, peeled and cut into chunks
1 apple, cut into chunks
20 skewers

Kiwis, Grapes, Pineapples and Blueberries are all also great choices.

Thread the strawberries, cantaloupe, banana and apple pieces alternately onto skewers, placing at least 2 pieces of fruit on each skewer. Arrange the fruit skewers decoratively on a serving platter.

Crafty Friday 8/26 - Going Batty

Happy Friday!! For those of you on the East coast....I pray that you stay safe from Irene. For the rest of you....Enjoy your weekend. It's supposed to be beautiful here!

This past week I finally managed to clean my studio. For most of the summer I haven't been able to walk in it easily or even find it because there was stuff everywhere. Projects were stacked on top of each other and bags of alpaca fiber seemed to be multiplying like bunnies when I wasn't looking.

I finally just did it. I really don't like cleaning, but I was running out of fiber batts to spin so I had to find the studio.

I'm so glad I did! I was able to create nearly 2 dozen batts in one afternoon on the carder. I made so many that I even had extra for the shop.

Delectable Tuesday Blog Hop 8/23 - Chocolate Cream Filled Cupcakes

Chocolate!! This is definitely a chocolate kind of week. And cupcakes with filling make it all better. :)


Chocolate Cream Filled Cupcakes

3 cups all-purpose flour
2 cups white sugar
1/3 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1 cup water
1 cup vegetable oil
1 teaspoon vanilla extract

1/4 cup butter
1/4 cup shortening
2 cups confectioners' sugar
1 pinch salt
3 tablespoons milk
1 teaspoon vanilla extract

Preheat oven to 375 degrees F. Line 36 muffin cups with paper liners. In a large bowl, mix together the flour, sugar, cocoa, baking soda and 1 teaspoon salt. Make a well in the center and pour in the eggs, 1 cup milk, water, oil and 1 teaspoon vanilla. Mix well. Fill each muffin cup half-full of batter. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Make filling: In a large bowl, beat butter and shortening together until smooth. Blend in confectioners' sugar and pinch of salt. Gradually beat in 3 tablespoons milk and 1 teaspoon vanilla. beat until light and fluffy. Fill a pastry bag with a small tip. Push tip through bottom of paper liner to fill each cupcake.

A Day at the County Fair

This past week was our County Fair. It's the one thing we all look forward to every year, but it also signals that summer is nearly over and school will start soon. Sad I know, but after this super heated summer I'm ready.

This year the kids all took 3 craft projects apiece to compete in 4-H. Between them they made a crocheted shawl, knit mini socks and fingerless mitts and many, many baked goods. We even took an improvised Lego ship. That thing was hard to transport!


All the projects got blue ribbons, but 3 very special projects got Best in Class awards. I'm so proud of them!! The girls are headed in their momma's footsteps in the knitting and crocheting categories. :o)

After all that we got to spend some time enjoying the fair. I always love going through the open class project barn and the animal barns. Except the draft horse barn. *shudder* Walking behind horses that look like elephants and are so tall I could walk under them (I'm 5'11") without ducking does not do my nerves any good at all.

The fair food always cracks me up. Is there anything they haven't tried to deep fry? Do people actually eat this stuff? And really....who wants to eat fried rice while walking around?


The amount of fried food is always astonishing, but I think the deep fried chocolate cookie had to be one of the most inventive and expensive. One cookie was $4!!! We managed to avoid the food and still enjoyed our visit. I think my arteries will thank me one day.

Delectable Tuesday Blog Hop 8/16 - Pizza Bread Salad

My favorite foods combined......what could be better?


Pizza Bread Salad

1/2 cup Italian Dressing
1 tsp. dried basil
1 bag (10 oz.) chopped lettuce
1 (8-inch) prebaked Italian pizza crust (from 10-oz package), cut into 1-inch pieces
25 slices pepperoni (2 oz), chopped
1 large tomato, coarsely chopped (1 cup)
1 piece (4 oz) mozzarella cheese, cut into 1/2-inch cubes

In small bowl, mix dressing and basil; set aside.

In large bowl, toss remaining ingredients. Pour dressing over salad mixture; toss to coat well. Serve immediately.

Crafty Friday 8/12 - Elephant Ears

The County Fair is coming!!

In true county fair style we have 4-H projects galore floating around the house. Not all of them are complete though. Tomorrow will be the mad project dash. Even waiting until the last minute, I'm really proud of my kids for going a little out of the norm and making knitted and crocheted items as well as baking homemade granola and cheese bread. Now knitted projects may not seem that abnormal to you, but we went around and counted every single project in that category last year and there were six including one made by the older daughter.

Now 4-H may be the reason we are at the fair, but what visit to the fair is complete without an elephant ear?


We always stop and get one or two to share. Ours are always topped with cinnamon-sugar, but I've heard that this is more of a regional thing. Is that true? I'd love to know.

Inevitably I start craving these in January when the snow is piled up and the cold winds are blowing. There are no fairs around then though so the next best thing is making my own. I know that these are one of those things that the atmosphere of the fair just makes them better, but hey.....they are still good.

And not a single word on how bad they are for me. I already know and I don't care.


Elephant Ears

1 1/2 cups milk
1 teaspoon salt
2 tablespoons white sugar
3/8 cup shortening
2 tablespoons active dry yeast
4 cups all-purpose flour
1 quart oil for frying
3 tablespoons ground cinnamon
6 tablespoons white sugar

In a small saucepan over medium heat, combine milk, salt, 2 tablespoons sugar and shortening. Heat until shortening melts and sugar dissolves. Remove from heat and let cool to lukewarm, about 110*F. Sprinkle in yeast and let sit until foamy. Transfer mixture to large bowl, and stir in flour to make a dough. Knead until smooth, cover and let rise 30 minutes. In a large heavy skillet or deep fryer, heat 1 inch of oil to 375*F. Roll out 1 to 2 inch balls of dough into thin sheets. Fry sheets 1 to 2 minutes on a side, until puffed and golden. Drain on paper towels. Combine cinnamon and 6 tablespoons sugar. Sprinkle over warm pastries. Serve.

Delectable Tuesday Blog Hop 8/9 - Fish Stick Tacos

I have Back to School on the brain. We start our homeschool the day after Labor Day and we are in full-on planning mode. That includes lunches. I like to cook "real food" lunches on school days, but sometimes we love convenience foods. French fries are fun once in awhile and what kid doesn't like fish sticks? Even I have a love affair with fish sticks, but I try to only eat them once in a while.

Fish Stick tacos are a huge hit when I make them. The beauty of them is they can be topped with almost anything. Traditional tartar sauce is good, but why not fresh Pico de Gallo or chipotle mayo? Here's a basic fish taco recipe. It makes 2 tacos each for a family of five.


Fish Stick Tacos

30 breaded frozen fish sticks
10 soft flour tortillas or crunchy corn shells
1/2 pound finely shredded lettuce
3/4 cup tartar sauce
3/4 cup salsa
shredded cheddar cheese, optional

Preheat oven to 400*F. Arrange fish sticks in a single layer on a baking sheet, and bake 20 minutes in the preheated oven, or until crisp and golden brown. Remove from heat and cut into thirds. Fill the tortillas with fish stick portions, lettuce, tartar sauce, and salsa to serve.

Crafty Friday 8/5 - Greyhaven Cowl


I've been all about knitting lately. I went months without knitting much and now all of a sudden I want to knit all the time. For now I'll go with it. I'll at least have samples knit from our yarns that way.

What's on the needles now though is not my yarn. I was having one of those "I'm tired of knitting with my own yarn can I please knit with someone else's" moments this past weekend at the Wine & Wool festival. I bought this awesome bluesy and brown worsted weight yarn from Colorbug Yarns. Her stuff is awesome, BTW. I couldn't wait to cast on with it. The only problem was I bought it with no idea of what I was going to do with it.

After a couple hours on Ravelry looking through patterns I found Greyhaven. It's a fun, slightly lacey cowl. I've honestly never knit a cowl before, but I like this one! It's knitting up so fast and I love how this yarn is striping. And the best part.....it's a free Ravelry pattern.

Wine & Wool Festival


This past Saturday we were vendors at the 2nd annual Wine & Wool Festival at Sandhill Crane Winery in Jackson, MI. This was the first outdoor festival we've done in 2 years that it didn't rain. What a relief! Although it was unbelievably hot.

This was also the first fiber festival that the kids haven't come along with us. They are usually very well behaved at these festivals and most of the vendors know that they belong to us because we see the same vendors over and over again.....I just didn't feel that a winery was the place for them to be running around. It made for some nice mommy and daddy quiet time.

I saw so many of my favorite local vendors. These are some very, very talented women. I couldn't help but spend some of the days profits on fluffy goodies. I even bought a pattern for a sweater that maybe I'll eventually get the nerve to make. Sweaters scare me, but this one was really pretty.

The highlight of the day though was meeting the queen of Phatfiber herself. Do you remember when I told you about Phat fiber? The lady behind it all lives in Illinois, but drove all the way to Michigan to visit the phatties at Wine & Wool. Considering nearly all the vendors were phat fiber contributors I can understand the visit. So many of us know eachother online, but how many chances do you get to meet online friends?

It really was the best part of the day and I now have a face to put with the hands on the Phat video. If you don't know about Phat fiber you really need to check it out and the video every month is hilarious!

Our next festival is in just a couple weeks and isn't really a festival, but an exhibit at the county fair. It should be fun!

Delectable Tuesday Blog Hop 8/2 - Oatmeal Chocolate Chip Muffins

I'm sick. :( My head is so stuffed up I can't think straight. So I am going to revisit an old recipe that I had forgotten about.


Oatmeal Chocolate Chip Muffins

1 1/4 cups old-fashioned oats
1 1/4 cups all purpose flour
3/4 cup packed brown sugar
4 tsp. baking powder
1 tsp. salt
1 1/4 cups milk
1/2 cup vegetable oil
1 egg
3/4 cup mini semi-sweet chocolate chips

Preheat oven to 400*

In a medium size bowl, combine the oats, flour, sugar, baking powder and salt. Add the milk, oil, and egg. Stir until just blended. Add the chocolate chips; stir. Divide the mixture evenly into 18 greased (or use muffin papers) muffin cups.

Bake for 20-25 minutes or until lightly browned.
